Vinification

The grapes were fermented on the skins for three weeks, similar to the process used for red wine production. This was followed by gentle pressing. The young wine then matured for 16 months on the lees in used barriques, gaining complexity and structure. Shortly before bottling, it was carefully racked to preserve its clarity and aromatic expression.
