2025 All Zero Red – der entalkoholisierte Allacher-Wein! Intensives Rubinrot, in der Nase sehr fruchtig, aromatisch nach Kirschen und roten Beeren, am Gaumen rund und ausgewogen. Idealer Speisebegleiter für Burger, Rindersteak und Schweinsbraten.
Vinifizierung und Ausbau
Die Trauben wurden früher geerntet, damit der Alkoholgehalt bereits im Vorfeld etwas geringer ist, danach sehr schonend gepresst und gekühlt vergoren und nach 2-monatiger Hefelagerzeit filtriert.
Die anschließende Entalkoholisierung erfolgt mittels des modernen, besonders schonenden Verfahrens der „Membranfiltration“.
Zunächst wird durch die Membrantechnologie ein Alkohol-Wasser-Gemisch vom Wein getrennt, wobei strukturgebende Bestandteile und Aromakomponenten weitgehend im Wein verbleiben.
Der abgetrennte Anteil wird anschließend unter Vakuum destilliert, entalkoholisiert und dem Wein ohne Alkohol wieder zugeführt, um den ursprünglichen Charakter und die weintypischen Aromen bestmöglich zu erhalten.

Description
An intense ruby red color, very fruity on the nose, with aromatic notes of cherries and red berries, round and balanced on the palate. An ideal companion for dishes like burgers, beef steak, and roast pork.
Vinification
The grapes were harvested earlier in order to keep the alcohol content slightly lower from the outset. They were then pressed very gently, fermented under cooled conditions, and filtered after a two-month period of lees aging.
The subsequent dealcoholization is carried out using the modern and particularly gentle process of membrane filtration.
First, membrane technology is used to separate an alcohol-water mixture from the wine, while structure-forming components and aromatic compounds largely remain in the wine.
The separated fraction is then vacuum-distilled, dealcoholized, and returned to the wine without alcohol in order to preserve the original character and the wine’s typical aromas as faithfully as possible.
